Tomy & Co

Description

For his first restaurant, chef Tomy Gousset wanted to create a warm, friendly setting with subdued lighting, where rigor and precision are essential in both cooking and service.

In reference to his collaboration with Tomato&co (the vegetable gardens of the Château de Courances, near Fontainebleau), the walls are covered with vegetables representing the four seasons.

The menu evolves regularly according to what nature has to offer:

  • black truffle gnocchi in winter
  • asparagus, mimosa egg, orange vinaigrette and nasturtium leaf in spring
  • girolles, roasted apricots and verbena in summer
  • chestnut and mushroom velouté in autumn
  • and always on the menu, the vegetable platter, which changes with the seasons, a veritable bouquet of color and taste.

The chef defines his cuisine as "neither classic nor modern, but timeless". In the dining room, Micael Morais, associate manager and sommelier, and his team do their utmost to ensure that customers enjoy an exceptional moment in a convivial setting, with the rigor of Michelin-starred service.

The chef and his team are proud to have been awarded a Michelin star in January 2019.
